Amanda’s Limoncello

Pack organic lemon peel in a quart jar and cover with vodka. Let sit on the counter @ least 10 days. Strain and add an equal amount of simple syrup. Store in the freezer until ready to serve. (Take it out occasionally and roll it to be sure it mixes well.)
