Coconut curd

Caitlyn decided to make a coconut cake and wanted coconut curd to go between the layers.  I’m saving her instructions in case I want them sometime later.

3 eggs, 1 can coconut milk, 3/4 cup sugar, and then whisk over a double boiler for 45+ minutes.

 

Dallop-A-Doozie Blueberry Cake

Briley Humphrey won first place at the Blueberry Festival in Burgaw, NC with this recipe this year.

Cake ingredients:

1 cup unsalted butter
2 cups granulated sugar
1 teaspoon salt
2 teaspoons baking powder
3/4 teaspoon vanilla extract
3/8 teaspoon almond extract
4 eggs
3 cups unbleached, all-purpose flour
1 cup milk
2 cups fresh blueberries

Cake instructions:

Preheat oven to 325ºF. Grease and flour three round, 9-inch cake pans.

In a mixer, combine butter and granulated sugar until thoroughly mixed. Add eggs, one at a time, mixing after each addition.

In a small bowl, combine milk, almond extract, and vanilla extract.

In a separate bowl, combine sifted flour with salt and baking powder.

Add 1 cup of the dry ingredients to the mixing bowl, followed by 1/3 of the milk mixture while mixing thoroughly. Repeat this step twice until all dry ingredients and milk mixture are added to the mixing bowl.

Place mixture evenly into three cake pans and add blueberries to each pan.

Bake for 20-25 minutes or until done.

Icing ingredients:

1 oz. cream cheese
1 c. unsalted butter
24 oz. powdered sugar
1 teaspoon vanilla extract

Icing instructions:

Mix cream cheese and butter thoroughly.

Add vanilla extract and mix.

Add powdered sugar slowly, until icing becomes thick enough to spread on the cake. Spread an even layer in between each cake layer, and spread evenly over the outside of the cake.

*Optional: After icing, completely cover the perimeter of the cake with blueberries.

As for tips and tricks with this recipe, Humphrey said to roll the blueberries in flour before strategically placing them into each cake to bake. In addition, she said, bakers should take their time in mixing and adding ingredients. She also suggests taking time in baking the cake, as she said cooking low and slow is best.
