Moni Dale’s Amazing Pimento Cheese

8 oz. Cream cheese (room temp)
½ c. mayonnaise
1 tsp lemon juice
4 oz. jar of pimentos
1 jar REAL bacon pieces
¼ c. scallions (finely chopped, use all of the bulb plus about 1 inch of the stem)
8 oz. Finely shredded Cheddar cheese


Mix all together, cover and chill. Serve with crackers.
