Banana Bread

1 c. sugar
2 eggs
2 c. flour
1/2 c. butter
2 bananas
1 tsp. baking soda
1/2 tsp. salt
1 tsp. lemon juice
1/2 c. milk
1/2 c. chopped nuts (optional)

Cream butter and sugar. Add eggs and bananas. Add lemon juice to milk (or just use buttermilk). Alternate sifting flour/soda/salt with pouring in milk mixture. Begin and end with flour. Stir in nuts. Pour into a lavishly buttered bread pan. Bake at 350ºF for @ 1 hour or until bread is springy.

Makes one loaf.

The secret to fantabulous banana bread is to freeze overripe bananas for later use. Thaw when you know you’re going to bake later in the day, cut off the stem end and squeeze the whole into your mix – the flesh will have “dissolved” along with a nice liquor and there won’t be any of the stringy bits like with a mashed banana. This does result in a finer crumb and shorter cook time but the flavour is by far the best :grinning:
